什麼是吞嚥困難？吞嚥困難是指在飲食、吞唾液或藥物吞嚥過程中遇到困難，不能安全地、有效地將食物由口送到胃內，取得足夠的營養及水分。

Dysphagia refers to experiencing difficulties during the eating, drinking or swallowing process, due to degenerated oral muscles and poor dentition, where one cannot safely and effectively transpose food from the mouth to the stomach.

Common Symptoms:

•Coughing or choking when eating or drinking
•Multiple attempts to swallow food
•Foods or liquids flowing out due to reduced muscle strength and control on oral cavity

Causes:

Loss of teeth, damaged neurological or muscular control of swallowing are the usual causes. Also, it can be caused by other health conditions, e.g. Stroke, Parkinson's Disease, Dementia, Nasopharyngeal cancer, brain damage or aftereffects of surgery and treatment.

Care Food (Soft Meal) Framework and Standards

Dedicated to developing an international standardized terminology and descriptors for the dysphagia diets, the International Dysphagia Diet Standardisation Initiative (IDDSI) has made a common terminology to describe food textures and drink thickness. The framework consists of 8 levels with respective numbering, definition and color.

The Hong Kong Council of Social Service (HKCSS), collaborated with the Chinese University of Hong Kong's Food Research Centre and the University of Hong Kong's Swallowing Research Laboratory, has developed a clear and localised Guideline of Care Food Standard, building upon the foundation of IDDSI framework. The guide aims to assist both the individual users and sector in accessing relevant information about the products and aiding in selecting suitable options.
